Coconut-Pineapple Loaf Cake

So I made the cake mentioned in my previous post and it turned out to be quite tasty. I made the mistake though of putting it in a pan that was just a tad bit too small so it spilled over a bit. To top that off, I pulled it out of the pan too soon (we were hungry and our coffee was getting cold!) and part of the bottom came off so it’s all lopsided and ugly. All that to say, you’ll have to make it yourself if you want to see what it looks like!!

A few modifications I would make to the recipe would be to increase the amount of coconut in the cake and on the cake (just tasty), and I would use diced or crushed pineapple instead of the chunks that the recipe required. The big chunks were just a bit too much and made the consistency a little odd.

I’d like to pull this recipe out again around Christmas as I think it would make a refreshing cake and will probably be the closest I ever get to making fruit cake again.
