Minty

I added a bit of mint extract to the last fruit salad I made. I’ve used fresh mint in the past, but I didn’t have any on hand that day. I chopped up a pineapple, a red delicious apple, a couple peaches, a banana and threw in some blackberries for good measure. Then poured a splash of orange juice over the top, a little mint extract, and a little powdered sugar. Mixed it up. Garnished it with a few fresh thyme leaves. It was very yummy and refreshing. Just the thing we need in 97 degree weather!
