Roasted Asparagus

I’ve done this with broccoli before, now it’s my favorite veggies turn to get caramelised!! Recipe taken from Gourmet Magazine. 

Ingredients:
  • 1 pound fresh asparagus, washed and trimmed
  • 2 to 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste

Directions: 

Preheat oven to 475 degrees F.
In a roasting pan toss the asparagus with the olive oil and vinegar until coated. Spread asparagus out in a single layer, if possible. Roast asparagus for 10 minutes until tender. Season with salt and pepper. Transfer to a serving dish.
