Country Chicken with Onions

This was recipe for Country Pork with Onions however, A) I don’t usually like pork and I never personally buy it, so I made it with chicken breasts and B) the recipe calls to fry up the veggies in a flameproof casserole and then transfer the whole thing into the oven for 3 1/2 hours. I don’t own a casserole. So I did it in my slow cooker and it was so fast and easy. You need:

2 chicken breasts (I used frozen ones)
4 garlic chopped garlic cloves
2 tbsp. olive oil
2 finely chopped carrots
2 chopped celery ribs
1 large chopped onion
3 chopped potatoes
2 sprigs of fresh thyme
3 springs of fresh rosemary
a handful of chopped parsley
1 large bay leaf
1ish cup of dry white wine
1 cup of water
20 cocktail onions
salt and pepper

First fry up the garlic, carrots, onion and celery in the olive oil for about 10 minutes or until veggies are soft. Transfer it to a crock pot. Add your uncooked potatoes on top of the vegetables. Put your chicken breasts on top of the potatoes. Put the parsley, sprigs of thyme and rosemary, your bay leaf and your cocktail onions on top of the chicken. Pour on your white wine and water. Add salt and pepper. Cook in your slow cooker on high until meat is cooked through and potatoes are soft (about 4 hours). I served it with bread and butter.
