I know recipes can be found online, but it is little more than rice cooked in a lot of milk, sugar and cinnamon, with raisins added towards the end. I've never done it, but if you wanted to jazz it up a bit, I think a cream sauce similar to the whiskey cream sauce used for bread pudding would be a nice addition (you could even add a dash of tequila instead of whiskey since it's for Cinco de Mayo).
