I have been charged with the task of making a dessert for a Cinco de Mayo celebration. Does anyone have any great ideas on this front? Any great Mexican dessert recipes?

FLAN! I LOVE flan! I have yet to conquer actually making it myself. My brother-in-law is Cuban and his mother makes a killer one… now I’m craving it!
Arroz con leche! It’s the Mexican version of rice pudding and is absolutely delicious. It’s fairly simple, too; I learned how to make it while I was living in Mexico. I know recipes can be found online, but it is little more than rice cooked in a lot of milk, sugar and cinnamon, with raisins added towards the end. I’ve never done it, but if you wanted to jazz it up a bit, I think a cream sauce similar to the whiskey cream sauce used for bread pudding would be a nice addition (you could even add a dash of tequila instead of whiskey since it’s for Cinco de Mayo).
